Hospitality is the least forgiving interior work there is. The room has to be finished, inspected, and ready to trade on a date that is already advertised, and the finish is inspected nightly by every guest who sits in it.
The build covers the full front of house: a bar with its own millwork and equipment coordination, a dining room built around a long communal table with pendant lighting set to it, and a host stand that carries the identity at the door.
Restaurant work also pulls in trades an office job never touches. Grease, ventilation, plumbing to fixtures and equipment, and health and building department sign-offs all sit on the critical path, and none of them care about the opening date.
